Tasting Notes

 

Domaine Terlato & Chapoutier is a collaboration between legendary French wine grower, Michel Chapoutier and wine industry icon, Anthony Terlato.

Grape variety: Shiraz

Terroir: the soil is composed of silstone with yellow and red podzolic earth and quartz rocks.

Harvest: hand picked at optimum maturity to retain natural freshness.

Vinification: 100% destemmed grapes are fermented in concrete tanks utilising wild yeasts. Gentle extraction by pumping-over and a long maceration of 4-6 weeks ensures a fine, well balanced tannin structure.

Maturing: 100% of the wine is aged for 12 months in French oak barrels.

Tasting
Colour: intense and deep inky colour with hints of violet.
Nose: liquorice and dark fruits with a hint of all-spice.
Palate: full flavoured and rich yet restrained with a hint of dark chocolate, blackberries and spice. A great length with fine persistent tannins.
Recommended food pairing:beef filet mignon.
Serving temperature: 15-16°C.
Ageing potential: more than 10 years.
