Ergo Sum Shiraz

Categories: , ,

Grown on the granite soils of Beechworth in the foothills of the Victorian Alps, this biodynamically farmed Ergo Sum Shiraz is another high quality example of Beechworth Shiraz.

Grape variety
100% Syrah

Grapes come from a granitic soil

Grapes are manually harvested at maturity avoiding overmaturation.

Grapes are entirely destemmed. Fermentation and maceration are performed in concrete tanks. The extraction is carried out by punching of the cap.

The wine is aged in oak casks (with a proportion of 30% of new ones) for 18 months.

Colour: deep garnet-red
Nose: black fruit flavours (blackberry) with some graphite and flinty notes
Palate: the spice and black pepper aromas reflect the expression of this granitic terroir. A firm tannic structure provides to this wine an exceptional length
