Deep and sustained, purplish reflections.
Complex and intense; graphite, notes of ink, raspberry, cistus flower.
Delicate on entry, gradually becoming denser, without aggressiveness, nice tight tannins. Firm finish, long persistence. Superb olfactory feedback of violet, white pepper. The wine, through the marriage of power and delicacy, delivers a fair expression of its great granite terroir.
100% Syrah; among the first planted in the department and, above all, among the rare few to be grown using the Goblet pruning method with individual stakes.
Hand picking at the correct maturity, early October. The yield is low, below 20 hl/ha.
Soil: Located in the Lesquerde district, an area in the department where the grapes are last to ripen, the vineyard parcel lies on a gentle, north-facing slope; very infertile, granite, ferrous soil, predominantly gravely on top. This terroir’s characteristics are reminiscent of certain northern Rhone Valley appellations.
The harvest is completely destemmed then vinified in small concrete tanks. Gentle extraction is required: light pumping-over or punching of the cap during active fermentation with 4 to 5 weeks total maceration.
The aging lasts about 18 months: the first year in demi-muids of 2 wines then the last 6 months in concrete vats in order to completely polishing the tannins while preserving freshness and smoothness before bottling.
