Severe sorting is carried out at harvest. This sorting, obligatory to qualify for the appellation, makes it possible to select the best bunches.
Quaternary terrace with large rolled pebbles on the surface from the old bed of the Rhône. The parcel, producing this parcel selection, has a very complex and varied geology. The vines are 90 years old.
Grenache being sensitive to oxidation, vinification is done in closed concrete vats. The vatting lasts about 3 weeks (which allows the tannins to polymerize) at a temperature between 30 and 33°C. Only the run-off wine is included in this plot selection.
In vats for around 16 months.
