Made in a true Provençale style, this dry rosé is a delightful aperitif or accompaniment to seafood and cheese.
The 2018 vintage was cool, with a longer ripening period than previous years. The grapes were ready for harvest in March, 4 weeks later than last year. This longer ripening has allowed the development of primary fruit while retaining freshness.
A mixture of clay, shale, siltstones and quartz
The grapes are harvested at night at an optimum ripeness designed to preserve freshness.
The grapes are destemmed and gently pressed to obtain high quality juice at low pressure and reduce the extraction of colour. The free run juice is fermented at a low temperature, then cold stabilised.
The wine is bottled soon after fermentation, to showcase the primary fruit and natural acidity.
Colour: pale rose petal colour.
Nose: Provides a mixture of bright red fruits, predominately strawberry and raspberry with grenadine aromas and some delicate peach notes.
Palate: Light and crisp with a subtle minerality to complement the red fruit flavours. A light, cleansing finish.
