2016 Domaine Tournon Shay’s Flat Vineyard Sangiovese

1.5 Ha of beautiful Sangiovese vines make up block 1A of our Shay’s Flat vineyard, which sits at an altitude of 350m in the Western Pyrenees Ranges and is organically farmed.
The 2016 vintage was dry and naturally low yielding in our vineyards due to minimal irrigation. The cool nights in our Landsborough Vineyard allowed the grapes to ripen slowly and achieve maturity while retaining freshness.
A mixture of deep red soil, schist, quartz and clay
Harvested at night in late March to ensure flavour ripeness.
The fruit was destemmed and transferred into a stainless steel tank where it was kept cool. Within a few days the indigenous yeasts started fermentation and the cap was managed through pump overs, twice daily for a period of 4 weeks to maximise the polymerisation of tannins.
The wine was transferred into larger format oak – to retain the fruit and savoury character of the wine. The French oak consisted of half old puncheons with the remaining oak consisted to be neutral – another process used to capture the primary fruit character of the wine. The maturation process lasted approx. 6 months.
Colour: dark, opaque with purple hues.
Nose: cherry, ripe red fruits and liquorice
Palate: fresh and inviting with dark summer fruit, hints of olive tapenade and a savoury finish.
